PMCA Research Chair Eric Schmoyer, Barry Callebaut USA sits down virtually with Anne Zaczek, Heirloom Cacao Preservation’s Executive Director and Bill Copeland, Independent Consultant for Rare Cacao, LLC.

PMCA first learned of the Heirloom Cacao Preservation (HCP) in 2019 and after teaming up for a webinar in 2020 decided to sit down again to find out how things are progressing with their research.

Anne Zaczek is the Executive Director of the Heirloom Cacao Preservation Fund, a non-profit organization with a mission to discover, identify and preserve fine flavor heirloom cacao varieties for the conservation of biological diversity and the empowerment of farming communities. Bill Copeland has over 35 years dedicated to Professional Printing & Packaging, becoming a Master Chocolatier, launching a Digital Imaging/Communications company, Professional Photography and Digital Asset Management company.
